Colour: Light straw yellow
Bouquet: Hints of fresh fruit such as white peach and pear mixed with hints of flowers like chamomile.
Flavour: Average acidity, pleasant creaminess, pleasant minerality and freshness.
Pairings: it pairs well with antipasto of raw fish, sushi, and shellfish. Versatile at the table, excellent with most kinds of fried food.
Vinification
The sustainably grown Pinot Grigio is harvested in the middle of August, at night, to preserve the natural acidity and freshness of the grapes and to avoid extracting colour from the skin. An extremely soft pressing is also performed to avoid extraction of colour. After natural decanting, fermentation occurs in stainless steel tanks at a controlled temperature of 16°C for several days. The wine is fined on its lees.
